Green Goddess Lentils

Ingredients
- 1 tin lentils, drained and rinsed
- 1 large kumara, peeled and chopped into small cubes
- 1 litre bone broth (use 4 tsp Awaken Wellness Chicken or Beef Bone Broth Powder dissolved in water)
- 1 red onion, diced
- 2 spring onions, finely sliced including green tops
- 2 stalks celery, finely sliced
- 4 cloves garlic, crushed
- 1 knob ginger, chopped
- 1 tsp chilli flakes (optional)
- Freshly ground black pepper and pink salt to season
- Olive oil for sautéing
- 4 cups baby spinach (or chopped silverbeet)
- 1 handful fresh herbs, chopped (coriander or parsley)
- 1 head broccoli, finely chopped, broccoli is the oestrogen metabolising super veggie, so eat up ladies
- 1 x 2g Ceres Organics seaweed snack packet, or 3 tsp Pacific Harvest seaweed (optional) a wonderful source of iodine for thyroid and reproductive health
Method
In a large pot, sauté the onion, garlic, and ginger in olive oil until soft. Add the pepper and chilli flakes and cook gently to release the flavours. Add the celery and cook for a few minutes, then add the spinach, seaweed, herbs, kumara, and bone broth. Simmer for 30 minutes or until everything is tender. If it's too runny, simmer a little longer to reduce, though Hayley loves it really brothy.
Add the lentils last so they don't go mushy. Serve with a dollop of plain unsweetened Greek yoghurt and fresh herbs.
To elevate this to a more filling meal, add a protein of your choice, Hayley added prawns, but shredded chicken, diced lamb, or flaked salmon all work beautifully.
