Loaded Broth Soup

Ingredients
4 cups water
2 tbsp Awaken Wellness Organic Chicken Bone Broth Powder
1 knob ginger, peeled and finely sliced
2 tsp chilli flakes (or to taste)
Pink salt, to season
Veggies
1 bunch bok choy (finely sliced)
4 carrots (peeled into ribbons)
1 red onion (thinly sliced)
1 cup green beans (lightly blanched)
Spinach, courgette, spring onion, mung beans, and cabbage all work well too.
Protein
2 cups prawns cooked first and set aside
(chicken works beautifully too, or a mix of both)
Optional: 3 fried eggs and fresh coriander, to serve
Method
Bring the water to the boil in a large pot, then whisk in the bone broth powder until smooth with no lumps. Add the ginger, chilli, salt, and veggies, and simmer for 5–10 minutes until the veggies are just tender. Add the cooked protein and heat through.
Keep the veggies crisp or cook them softer, your call. Top with a fried egg and fresh coriander for an extra protein hit.
